  • Hot Tangy BBQ Chicken Pieces

    This recipe serves up to 6 people. Preparation time: 20 mins. Approx cooking time: 40 mins.

    Ingredients

    • 1.5kg/about 20 skinless chicken pieces (washed and patted dry)
    • 1 tbsp sunflower oil
    • A jar of Bim’s Kitchen Hot Tangy BBQ Sauce

    Method

    Pour ¾ of the bbq sauce over the chicken and mix thoroughly. Leave chicken to marinate in the fridge for at least 1 hour (the longer the better, overnight if you can).

    Remove marinated chicken from the fridge at least 30 mins before cooking. Heat oven to 225°C.  Fully line a large roasting tin with baking foil (just makes washing up easier!). Coat the foil with the sunflower oil, place the chicken pieces flat in the tin and pour over the remaining bbq sauce. Tightly cover the tin with more baking foil and place the tin in the middle of the pre-heated oven for 20 mins. Remove the tin from the oven and carefully open the foil cover. Reduce the oven temperature to 190°C.

    Carefully pour the chicken juices in the tin into a bowl (keep as a smoky chicken broth to cook something else). Baste the chicken pieces with the remaining ¼ jar of bbq sauce and return to the middle of the oven for about 10 mins. Turn oven to “grill” for a further 10 mins.  Make sure chicken is fully cooked through (juices should run clear) and nicely browned and sticky. Drizzle the thickened bbq sauce juices at the bottom of the tin over the chicken before serving with your chosen side dishes. TIP: the final oven baking/grilling can be done on an outside BBQ instead.

    Great Tapas Evening – February 9th, 2014
    "We went to the Tapas Evening and wow how enjoyable was that?! The food was amazing and plentiful lots of lovely different flavours and a good variety of choices. The sampling of wine an excellent idea! So easy to get a card add some money then you a can sample a variety of wines before you make your final choice. The staff were very friendly helpful and paid attention to detail a really enjoyable evening! Oh and the salted shortbread with chocolate and cream was out of this world. Will be going back again. Well maybe after a holiday in Spain!"

    Double Date. Tapas Evening – February 6th, 2014
    "My partner and I enjoyed the lovely (newly introduced) tapas themed evening. Taking a chance on Seasons, compared with the other restaurants at The Waterfront I was very pleased that we chose to head there. The mixed platter of meats/crab cakes/stuffed mushrooms/olives/cheesebites and assorted breads with oils were devine. Our choice of wine complimented the variety of flavours. The atmosphere was relaxed and my partner and I will definitely return for lunch and a spot of wine tasting. Many Thanks"

    "We enjoyed a wonderful lunch with friends here. From the moment we arrived we received personal, attentive and friendly service from all of the staff including the manager. He took the time to explain to use the concept of the wine machine which is a fantastic idea. The wine was of the highest quality with a broad selection of types.

    To eat we ordered freshly caught (local) crab salad, two fresh (local) mackerel sandwiches and one crab sandwich. They came with a wonderful salad of mixed greens, stuffed olives, a bean salad and one of the best coleslaw's I've ever tasted. The presentation was excellent and the quality of the meal was quite obviously high.

    I would definitely recommend this venue. Great position within the smart marina complex, ample parking at hand, fantastic food and wonderful staff. Thanks!"

    Fantastic Evening - Great Food – November 1st, 2013
    "My wife and I went to the Seasons restaurant in the Harbour Waterfront - Eastbourne on Friday 25 October for an evening of live music and a hot buffet meal. Absolutely fantastic, restaurant was full (so good to book). Hot Buffet was excellent with loads of choice. The soup was out of this world and we had to give up after our third helping! Main course a lot of variety and really tasty - you could eat as much as you wanted. Desert course, choices of mouth watering cakes etc. All swigged down with a nice bottle of white wine. Live group were fun and kept the evening going. The owners Steve and Christine were on hand to ensure everyone was attended to and the staff were excellent as well. What more can I say - one of the best evenings out for a while - great food - great atmosphere. We will definitely be going again!"
